Apple, cranberry and pear crumble

1377972_10153347551105411_287449091_nWhen I was in Iowa last week, Aaron brought Averie home from pre-school with a heaped bag of pears.  I decided to kidnap the bag of pears and transform them into baked goodies once I got home from our road trip.

Friday was that day and I started with a recipe I stumbled upon on ‘www.AllRecipes.com’ for apple, cranberry and pear crisp – this simplistic, rustic, recipe has haunted me since the day I read it last week.  It sounded delicious!

I made two of these, one for dessert at a friends house Saturday night and one to test – obviously 😉 LOL! My main concern would be that it would be bland, so I added a generous dose of cinnamon with a 1/3 as much nutmeg.

Ingredients
  • 2 apples (peeled, cored and cubed)
  • 2 pears (peeled, cored and cubed)
  • ½ cup dried cranberries
  • 1 tablespoon all purpose flour
  • 2 tablespoons honey
  • 1.5 tablespoons lemon juice
  • ½ cup all purpose flour
  • ½ cup packed brown sugar
  • ½ cup quick cooking oats
  • ½ cup butter
  • optional: ¼ cup ground walnuts
Instructions
  1. Preheat oven to 375 degrees F (190 degrees C). Lightly grease an 8 inch baking dish.
  2. Mix the apples, pears, cranberries, 1 tablespoon flour, honey, and lemon juice in the prepared dish.
  3. In a bowl, mix ½ cup flour, brown sugar, oats, walnuts, and butter to the consistency of coarse crumbs. Sprinkle loosely over the fruit mixture.
  4. Bake 45 minutes in the preheated oven, or until brown and crisp on top.
