Just for my own future reference, so I can keep a record of what I had for my St. Patrick’s day dinner (so I one-up it next year 😉 LOL!)
This year, became almost like a Thanksgiving day dinner, quite by accident. It just so happened that the Australian Grand Prix season opener was on, over St. Paddy’s day weekend. We invited friends over to watch the race, and, cause you know what I’m like, I took this opportunity to feed people!
We had a party of eight, and, given that my dining room table only seats six, I had to break out my Thanksgiving resolution and unfold one of my craft tables and get the room set up.

Pea and Bacon Soup a la Crystal Bridge with Irish brown bread a la Aileen Gerla

Roast Chicken (cooked in orange juice), Lamb (with rosemary), Beef (it was originally chicken and lamb but Wholefoods destroyed my lamb with ounces of fat so I needed an emergency saviour meat!)

Roast potatoes, leeks and carrots (see below)

Summer Pudding a la Frances Andrew
Roasted potatoes, carrots and leeks
- Prep: 20 min. Bake: 45 min.
- Yield: 12 Servings
Ingredients
- 2 pounds small red potatoes
- 1 pound fresh baby carrots
- 3 tablespoons butter, melted
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 6 medium leeks (white portions only), halved lengthwise, cleaned and cut into 1-inch lengths
- 2 garlic cloves, minced
Directions
- Scrub and quarter potatoes; place in a large bowl. Add the carrots, butter, oil, salt and pepper; toss to coat. Arrange in a single layer in two ungreased 15-in. x 10-in. x 1-in. baking pans.
- Bake at 425° for 25 minutes. Add leeks and garlic; bake 20-25 minutes longer or until tender, stirring occasionally. Yield: 12 servings (3/4 cup each).
I really like this way of cooking the vegetables, and, as someone who has only very (very) recently started eating leeks, it was a way of getting an added vegetable into our meal.
And I got to play and cuddle with my adorable little Goddaughter, who enjoyed all of the yummy foods put in front of her!
What a feast! Talking of which, have you been to Feast yet? Really liked their fish soup, and gave it 7/10. Admittedly, the fish soup I’d had earlier the same year in Perpignan was 10/10. Still…
I have no idea what Feast is or where it is, but I’d definitely be interested in a 7/10 kinda place…even moreso the 10/10 😉
It’s a restaurant owned by a couple of chefs from the south coast here. I wasn’t overly impressed. Although, my friend in the Heights loves the place. Partly, possibly, as they cook mostly British/European food. Here’s the link: https://sites.google.com/site/feasthouston/
