Last, but not least on my trio of banana baked goodies, was a tray bake. Chocolate banana bars, I increased the cinnamon in this recipe – 1 tbsp, but even that wasn’t enough. Go big or go home, chuck in a heap!
Other than that, this recipe stretched pretty far indeed!
A whopping 210 syns for the entire recipe, but this spanned over two 8×8 pans, both were sliced in half, and sliced into 8 for a total of 32 slices at 6.5 syns per slice.

Ingredients
- 2 cups flour (46 syns)
- 2 teaspoons baking powder (1 syn)
- 1 teaspoon salt
- ¾ cup low fat margarine (softened) (42 syns)
- ⅓ cup splenda sweetner
- 1 cup brown sugar (again I used splenda half and half) (24 syns)
- 1 teaspoon vanilla extract
- 1 teaspoon cinnamon
- 1 cup mashed ripe bananas (about 4 bananas) (20 syns)
- 1 Egg
- 2 cups bittersweet chocolate chunks (77 syns)
Instructions
- Preheat oven to 350 degrees. Grease a 16x12 sheet pan with Pam - I used two 8x8 pans instead.
- Using an electric mixer beat together butter, granulated sugar and brown sugar. Add the egg and continue to beat until fluffy.
- Add vanilla and bananas and continue to blend.
- In a separate mixing bowing combine flour, baking powder, cinnamon and salt.
- Mix the dry ingredients into the wet mixture just until incorporate then stir in chocolate. Spread evenly in the prepared sheet pan.
- Bake for 20-25 minutes until edges are golden brown and springs back when pressed gently with your finger. Cool completely, garnish with powdered sugar and slice.
