“I like this Slimming World thing”was what my hubby said to me this afternoon while I was making dinner.
Day two in the Slimming World house and I have to admit, I wasn’t sure how I’d get on. For me, day one is always gung-ho, resolve is strongest, determination at it’s highest and fridge most full of ‘good’ food.
Day two, you’re normally wondering what the hell you’re doing and how you’re going to survive.
Today, however, I was as resolved as I was yesterday. Twitter has brought me a whole slew of wonderful new Slimming World friends, who have given me great suggestions about various low-syn foods to include in my lifestyle change.
Tonight’s dinner offering, was something I heard one of the ladies mention at group the other day.
Sticky Chicken
Ingredients – serves 4, (2 syns on Extra Easy)
3 tbsp honey
3 tbsp balsamic vinegar
3 tbsp soy sauce
680g chicken breasts, cut into 1″ cubes
Method
1. Mix together the honey, vinegar and soy sauce. Toss the chicken cubes in the mix to coat thoroughly, and leave to stand for at least 30 minutes in the fridge.
2. Heat a frying pan, add the chicken cubes and marinade. Cook on a high heat for about 20 minutes, until all the liquid has absorbed into the chicken. Stir regularly to prevent burning.
3. When the chicken is thoroughly cooked, serve immediately on a bed of crispy salad.
This was an insanely easy recipe, both of the boys cleaned their plate and their only complaint was, that there wasn’t enough of it!
It was delicious, quick and easy to make and I can most definitely see it becoming a frequent flyer in our house!
We make this all the time “honey balsamic chicken” is what we found the recipe under. DELICIOUS! We eat it on salad or with couscous. So glad your house is enjoying it too!

Can you give us the recipe for the garlic, rosemary wedges and beetroot too? Cos that sounds lovely!
I just chop potatoes into wedge shapes, spray them with pam/fry light, sprinkle garlic granules, dried (or fresh) rosemary over it (as for how much, it’s personal taste!) and the beetroot I just got from the jar! 🙂
This was delicious though I didn’t use enough chicken so it wasn’t quite sticky as was working from memory as other half was on pc whilst I was cooking, can’t wait to try it again with more chicken, and its reminded me of my love of balsamic vinegar yummy
