I have had the pleasure of ‘meeting’, online, a very talented recipe creator, Siobhan over at Slimming Eats. If you haven’t yet visited her website, even if you’re not on Slimming World – go now! What are you waiting for?
I’ve tried a number of her recipes, and, it’s no secret, that her braised beef is one of our favourites here in the McMaster abode. I have seen this on about a billion (may be a *slight* exaggeration) Pinterest boards and I finally remembered to buy some smoked paprika and boneless/skinless chicken thighs the other day, so I was thrilled to finally be able to make this one-pot, flavourful dish.

I left out the sugar and bumped up my veggie content by adding some butternut squash, extra carrots and an extra bell pepper. I served it over a bed of wilted spinach, broccoli and peas (and used my HeB on some yummy garlic bread!) but it was delicious! Before you ask, it wasn’t at all spicy, but full of a deep smokey flavour, Col and I both loved it, the ‘dark meat’ chicken gave it an added depth and it’ll definitely become a regular, cause it was pretty much a one-pot, minimum mess dish.
I have to say, three of my favourite recipes come from Siobhan’s site and I can’t wait to get stuck in and see what else she has for me to try!!
